Thai spices marinated salmon and quickly fried.
Thai spices marinated salmon – an indicator of the readiness of the fish is the change in its color, as well as the fact that it slightly disintegrates. Word “marinade” comes from the Latin "marinara" (sea): Initially, the role of the marinade was played by sea water. You can not add vinegar and mayonnaise to marinade. Vinegar can make meat too hard.
Ingredients (four servings):
- A piece of ginger – 2‚5 cm
- Coriander seeds (ground) – 1 Art. the spoon
- Chili powder – ¼ Art. spoons
- Sesame oil (can olive) – 1 Art. the spoon
- Fillet salmon with skin – 4 PC. approximately 150 g
- Lime juice – 1 Art. the spoon
- Vegetable oil – 2 Art. spoons
- Lemon
For garnish:
- Rice
- Vegetables (tomatoes ‚pepper)
- Greens
- Ginger
- Coriander
- Chili powder
- Lyme
- Sesame
- Sesame oil
Ginger grate (1)
Mix ginger‚ coriander‚ chili powder, juice lime and sesame oil (2).
Put the fish in a non-metal dish ‚previously dipping it in the marinade (3).
Cover with cling film and refrigerate for 30 minutes (4).
Heat a heavy-bottomed pan, grease it with oil. Put salmon skin down and fry for four to five minutes until crisp (5).
An indicator of the fish’s readiness is a change in its color ‚as well as the fact that it slightly breaks up when a fork is stuck. If you want more spices, add rosemary, Safran and basil.
Boil rice, finely chop and fry vegetables.
Serve with rice and vegetables.; decorate the dish with herbs.
